Hummus is so versatile and delicious
Hummus is a fantastic dip or spread. The basic recipe includes chickpeas, tahini (a sesame seed paste), oil, lemon juice and garlic. You can add many other ingredients for flavour and colour, including roasted beetroot, carrot, or pumpkin.
It is popular in the Middle East and the Mediterranean, where it originated. Now, people all over the world enjoy this dip.
Hummus works well as a dip for vegetables, crackers or pita bread. It is also a great substitute for spreads such as butter or margarine in sandwiches.

Making hummus at home reduces packaging waste
You can buy hummus from the supermarket. It is usually packaged in a plastic pot made from Type 5 or 6 plastic. These plastics are collected to be recycled in some local council areas, but not many. Most councils collect plastic types 1 and 2.
Plastics types 5 or 6 are more difficult to recycle, and produce a lower quality recycled plastic. And we don’t usually recycle them in New Zealand, so they get sent overseas. It’s hard to trace what happens to plastic sent offshore.
To reduce this type of plastic packaging from ending up in landfill, you can make hummus at home.
It is cheaper than premade hummus, easy to make, and tastes delicious.

Easy to make Hummus recipe
Ingredients
- 400g can of chickpeas, drained
- 2 garlic cloves, crushed
- 5 tablespoons of olive oil
- 2 tablespoons of tahini
- Juice of a lemon (or two, if you love lemons)
- Salt and pepper
Method
- Put the chickpeas and garlic in a bowl, and mash them together until creamy (I use a potato masher, but you can use a fork, or you could use a food processor).
- Gradually beat in the olive oil.
- Stir in the tahini, and lemon juice.
- Season with salt and pepper to suit your taste.
Notes
Tahini is a sesame seed paste, and is available at most supermarkets, or health food stores. Or you can use smooth peanut butter in place of tahini.

It really does only take a few minutes, Tessa. I made a double batch this week, and it has lasted for 5 days, so it was a very low investment of time for the amount of hummus we ended up with!
